Chocolate Chia Pudding

 

Ingredients

4 tbsp whole chia seeds

1/2 cup coconut milk

1/2 cup water or unsweetened almond milk

1 tbsp raw cacao powder

1 tbsp monkfruit sweetener

Optional: 5-10 drops stevia extract

1 1/2 tsp raw cacao nibs

1/4 tsp cinnamon and/or pinch cayenne pepper

dash of sea salt

Directions

Mix the chia seeds, coconut milk, water, cacao powder, monkfruit and stevia. If you prefer a smoother texture, use ground chia seeds. Let it sit for at least 10-15 minutes, ideally overnight in the fridge. Top with cacao nibs + sea salt.
